Had FaceTime cooking class date with Kathia last night. She taught me small batch of lemon curd, caramel, Oaxacan chocolate, buffalo sauce, & Mamasita’s Mole w/chili seco & organic cacao from La Luz :) super grateful for her patience, expertise, & delight in details. These sauces were way it’s Gotta B—dam delicious. FaceTime definitely helped the communication and I’m super inspired to get it right for you.
Heading now to @artisanskitchenrental to make round two of everything —your invited to stop by tomorrow 9a-3p at the kitchen in Highland Park —I’ll have limited menu and love for you to sample & try Mamasita’s sauces made by me.

The cacao shell was spoiled for chocolate but was sweet to eat. A guanábana type flavor which is similar to banana/pineapple/papaya. First time learning more about cacao at the source. Al and has mom Dona Gude have been growing, roasting, and selling organic cacao forever and really loved experience tasting and learning more.

Thanks Al & his mom Dona Gude for growing greatness! Here is peak at their cacao tree in La Luz, Tututepec, Oaxaca. We love using for our chocolate crepes there and excited to share with you to open @evanstonfarmersmarket 5/4 & 5/5 Cinco de Mayo brunch at our commercial kitchen in Highland Park. In video Al explains that the cacao is either 20-30 days from being ready or others are not good for cacao. Turns out if it spoils for cacao it turns into something else sweet & delicious. More on that later. Look forward to cook for you soon. Going to make mole and some chocolate to sample this Sunday if you’re around Highland Park stop by 9-3.

Hello again! Had been meaning to post more follow ups to start of season & cinco de mayo brunch—unfortunately Kathia fractured her ankle on family hike couple weeks ago and have been focusing on her healing. Couple more weeks left of being off her feet and then from there will be few months to b 100%. Definitely puts in perspective again how valuable our health is and Kathia is in great spirits while healing ❤️🩹
We plan to continue on with the season from the start 5/4 @evanstonfarmersmarket. Every crepe is a moment and we love for you to enjoy yours the way it’s Gotta B.
Menu will be focused on favorites and grow as we go. Will be featuring your favorite farm ingredients and happy to add back Al’s award winning butter from Nordic Creamery & Brunkows 2yr aged cheddar. I know it’s everywhere and happy to add Partana EVOO, my mom side of the family is from that city in Sicily and the castle in the picture has our family name, Graffeo, associated with it. We stayed at olive oil farm there in 2019 and love chance to circle back thru this ingredient. Also, our commercial kitchen has new straightforward storefront for clients to offer specialties for pickup—we will have staples & Mamasita’s sauces available for purchase/pickup(more on that later). Kathia will be teaching me thru FaceTime to make a few other sauces that I have not learned—if you don’t see it on the menu it’s not yet the way it’s Gotta B! Yes, the mushroom sauce I know & will be excellent :)
